What is India Pale Ale?

India Pale Ale, shortened to IPA, is a hop-led ale family. It can be floral and earthy, sharply bitter and piney, or soft, hazy and packed with fruit-like aroma.

The name has historical roots in British pale ales exported to India. Modern IPA is much broader than a single historic recipe, with British, West Coast, New England, session and double versions.

What does IPA taste like?

Hops drive the experience. Depending on variety and brewing method, the aroma may suggest grapefruit, orange, mango, passion fruit, berries, pine, flowers, herbs or resin. Malt normally supports the hops with bread, biscuit or light caramel.

A common misunderstanding

Is every IPA bitter?

No. Bitterness remains important to many versions, but brewers can add hops late or during dry hopping to build aroma without the same degree of bitterness. Sweetness, body, carbonation and water chemistry also affect how bitter a beer feels.

How to serve IPA

Start around 7 to 10°C. If the beer is too cold, much of its hop aroma can be hidden. A tulip, stemmed beer glass or clean nonic pint gives the aroma room to gather. Check freshness and protect IPA from heat and light.
