The brewery laboratory that changed science

A brewery trying to stop beer going bad helped standardise yeast, then gave laboratories everywhere the pH scale.

Beer could suddenly turn bad

Nineteenth-century brewers could follow the same recipe and still get different results. Mixed yeast cultures and unwanted microorganisms made fermentation unpredictable. A batch might taste fine, strange or completely undrinkable.

Carlsberg’s response was unusually scientific. J. C. Jacobsen founded a research laboratory in 1875 to understand brewing at a deeper level rather than merely improve one recipe by trial and error.

The first breakthrough

One yeast cell, multiplied

In 1883 Emil Christian Hansen developed a method for isolating a single desirable yeast cell and growing it as a pure culture. Carlsberg used the culture successfully at production scale in November of that year.

The remarkable part is what happened next. Carlsberg’s own account says Jacobsen gave the pure yeast to other brewers for free. The competitive advantage became a shared brewing standard.

The second breakthrough

A two-letter scale escapes the brewery

S. P. L. Sørensen, director of the laboratory’s chemistry department, developed the pH scale in 1909. It provided a practical way to describe acidity and alkalinity from 0 to 14 and to study their effect on biochemical reactions, including brewing.

The scale moved far beyond beer. It became routine in medicine, chemistry, agriculture, water treatment, food production and school laboratories.

Why the story is bigger than beer

A company laboratory with public consequences

Breweries often market themselves as innovators, but pure yeast culture and the pH scale are not novelty packaging. They changed industrial fermentation and scientific measurement.

Carlsberg continues to frame the laboratory around shared knowledge. That philosophy is the enjoyable twist in the story: the search for a more reliable pint produced tools used by people who may never drink beer at all.
